Cookies for Your Happiness? What???????????

Well, we’ve all STILL been home more than usual, and we all continue to be sick and tired of Covid. Amiright? ??? We know that cookies = love so bake some up. Ride another fiftyzillion miles on your Peloton! (Club Bangers anyone?)

Who cares if we’ve just come through the holidays, here at BBP we’re going to bring you one of the sweetest things we know— COOKIES! Yes. Cookies are absolutely for your happiness!

Because we love you so much and know that you deserve the best and FASTEST cookie recipe on the planet (It’s our blog so we get to say this okay?) we present our favorite. It’s not our favorite Christmas cookie or anything, that would just be crazy.

It’s our favorite man I could use a cookie right now—– or my friend needs a cookie right now.  Make a dang cookie, save the world.

Save the world? Yes. It’s that good. And don’t come at us like, ick coconut. You are very simply wrong on this one.

Chewy Coconut Cookies

Yield. 3 dozen (unless you eat a lot of batter or make smaller cookies)

  • 1/2 cup butter, softened
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 room temperature egg
  • 1 1/4 cups white flour (King Arthur is the choice around here)
  • 1/2 tsp baking soda
  • 1/4 tsp table salt
  • 1/2 tsp vanilla
  • 1 1/2 cups flaked coconut

Preheat the oven to 375 degrees and line baking sheets with silpat or parchment paper

Mix the dry ingredients, flour soda and sald. Cream the butter and sugars until fluffy and add the egg, beating to combine. Add the dry ingredients a but at a time and mix until combined. Add the vanilla and the coconut and gently mix.

Drop onto a lined cookie sheet for 9 minutes if you have small cookies, or if you’re like us and prefer to drop golf ball sized dough nuggets of happiness onto the sheet. If you like a big cookie set the time for 10 minutes and keep your eyes on it. When they are done they are lightly browned, not oozy in the middle but they will continue to set for a little bit after they come out of the oven. Don’t overbake these, it’s tragic.

Make ’em big, make ’em small (okay, make ’em big) and enjoy them completely! They’re delicious warm, superb cold and they’re just that good. Chewy, coconutty (even if you don’t like coconut) and awesome.
